This chocolate couverture derives from a hybrid variety of centrally fermented Trinitario cocoa. Trinitario is a finer bean that makes for a smoother chocolate. These cocoa beans have a medium acidity which is well-balanced with notes of aromatic nutmeg.Â
Produced in the Antioquia region of Colombia, the farmers of these beans have been growing this variety for centuries. 200 shareholders strive to use sustainable farming practices in all their cocoa production. 35% of their cohort is now women. The post-harvest process is strictly controlled to ensure only the finest quality is produced.
