Kamotsuru daiginjo gold is a light and sweet sake with two flecks of gold within every bottle. Made with rice that grows in Hiroshima, this variety boasts a tropical flavour, with notes of strawberry and banana on the nose and a crisp, light-bodied finish. Sip this sake alongside sashimi, shellfish, salads and steamed vegetables.
Daiginjo rice wines are typically the most prized bottle of the sake brewery. To classify as a daiginjo variety, at least 50% of the outer rice layer must be polished away. The higher the polishing rate, the more intense the rice flavours in the sake. Daiginjo sakes are best served chilled to between 10 and 5°. These sakes tend to be fruity and fragrant, and these aroma compounds are very delicate. Refrigerate the sake or use a cold water bath with a few ice cubes to enjoy this sake at its best.
